Zucchini Walnut Loaf Recipe
A delicious hearty zucchini loaf recipe that is filled with goodies for a filling snack.
3/4 cup oil
2 cups brown sugar
2 tsp vanilla
2 cups flour - (gluten free works too)
2 tsp cinnamon
2 tsp baking soda
1 tsp allspice
1/2 tsp cloves
1/2 tsp baking powder
2 cups shredded zucchini
2 cups chopped walnuts
2 cups raisins
1 cup grated carrot
1/2 cup fine coconut
1 cup flour (gluten free flour works too)
Preheat oven to 325F.
Beat eggs slightly.
Add oil, brown sugar and vanilla and stir in.
Mix in 2 cups flour, cinnamon, baking soda, allspice, cloves and baking powder.
Mix in zucchini, walnuts, raisins, carrots, coconut and flour.
Stir to blend, but do not over mix.
Bake in 2 lined 9x5 inch loaf pans.
Bake for 1 hour and 20 minutes, or until you can insert a toothpick and it comes out clean.
