Salmon Casserole Recipe

A Flavorful salmon casserole recipe, Cooked with peppers this dish is great served with rice or potatoes.
1 large green pepper
1 large red pepper
1 medium onion
2 teaspoons lemon juice
2 teaspoons oil
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups large pinapple chunks
Preheat oven to 350 degrees F.
Cut salmon and all vegetables into bite sized chunks.
Grease a cast iron skillet or oven safe baking dish.
place pinapple over bottom of pan.
in a medium sized bowl, combine lemon juice, oil and spices. gently toss fish and vegetables to coat.
Pour fish mixture into baking dish.
Bake 30 minutes or until fish flakes easily and veggetables are tender.
