Potato Skins Recipe
This potato skins recipe it the ultimate potato recipe!
4 large baking potatoes, baked
3 Tablespoons olive oil
1 Tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon pepper
8 slices bacon, cooked and chopped up
2 cups shredded cheddar cheese
1/2 cup sour cream (optional)
4 green onions, sliced (optional)
Preheat oven to 475F.
Cut potatoes in half and scoop out potato leaving the skin behind. Place skins on baking tray.
Whisk together with a fork oil, Parmesan cheese, salt, garlic powder, paprika and pepper. Using a brush, brush oil mixture all over potato skins.
Bake for 8 minutes, then flip over. Bake for another 8 minutes. Take out of oven and flip again and cut in half.
Sprinkle with cheese and bacon. Bake for an additional 2 minutes, and serve hot. Serve with sour cream and green onions.
