Pork And Potato Casserole Recipe
A Hearty recipe for pork and potato casserole covered in melted cheese.
3 cups young potatoes, par-boiled
3 cups cooked pork, cubed
1 small zucchini
2 cloves garlic
1/4 cup onion, diced
1 1/2 cups mozzarella cheese, grated
Preheat oven to 375 degrees F. Grease a 9x9 inch baking dish.
Cut young potatoes in halves, cube the cooked ppork and slice zucchini.
Thinly slice garlic.
Place pork and vegetables, onion and garlic in baking dish and drizzle with oil, salt and pepper.
Cover with foil and bake for 15 minutes.
Remove foil, and sprinkle cheese over top, continue to bake 15 minutes or until potatoes are fork tender.
