Grilled Chicken And Vegetables Recipe

These easy kebabs are a great meal for the family or for entertaining.


2 Tablespoons vegetable or olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon paprika
juice of 1 lemon
1 kg chicken breasts and/or thighs, cut into 1 inch pieces
3 red peppers, cut into 1 inch pieces
3 yellow peppers, cut into 1 inch pieces
2 zucchinis, cut into 1/2 inch rounds
12-15 button mushrooms, cut in halves
wooden skewers


In medium bowl, mix oil, garlic, paprika, salt and lemon juice.

On covered surface, thread vegetables and meat onto wooden skewers, alternating for a nice pattern.

Place threaded skewers in large dish and coat with oil mixture.

Refrigerate for 3 hours, turning at least once.

Remove from fridge and season skewers with salt and pepper.

Grill on BBQ or broil in oven for approximately 5-8 minutes per side, flipping once, until chicken is cooked.
