Granola Bar Recipe

Sweet and delicious home made granola bar recipe.
2 cups quick oats
2 cup puffed quinoa
1 cup puffed cocoa quinoa
1/2 cup chopped peanuts
1/2 cup honey
1/2 cup peanut butter
1/4 cup coconut oil
1/2 teaspoon salt
1 teaspoon vanilla
2 cups chocolate chips
1 teaspoon oil
Cover a 9x13 inch pan with wax or parchment paper.
In a large bowl, mix the puffed quinoa, quick oats and nuts.
In a small sauce pan, over low heat, stir together honey, coconut oil and peanut butter until just melted combined.
Remove from heat and stir in vanilla and salt.
Pour mixture over the dry ingredients and stir gently until well combined.
Press mixture into lined pan.
Place pan into the fridge to set.
Once your mixture has hardened, carefully cut into bars.
Place the cut bars back into the fridge to remain cool while you make the chocolate coating.
Melt the chocolate chips in a double boiler and stir in oil.
Pour the chocolate into a shallow dish for dipping.
Dip the cooled granola bars into chocolate, place on wax paper and drizzle chocolate on top.
Store bars in refrigerator.
