Beef And Noodle Soup Recipe

Here is a hearty beef and noodle soup made with very simple ingredients.
1 lb cubed lean beef stew meat
1 cup chopped onion
1 cup chopped celery
8 cups beef broth (canned, tetra pack or bouillons added to water)
1/2 teaspoon dried parsley
1/2 teaspoon ground black pepper
1 cup chopped carrot
1 1/2 cups noodles of your choice
salt and pepper to taste
*Optional, garnish with fresh herbs.
Using a soup pot, melt the butter over medium heat.
Add the beef and cook for about 5 minutes, or until the meat has browned on all sides. Add the onion and celery and cook another 3 minutes.
Pour in the beef broth.
Add the parsley, ground black pepper, and carrots.
Bring to a boil, reduce heat to low and simmer for 30 minutes. Do a taste test and adjust seasonings to suit your taste.
Add the noodles, turn heat up and bring the soup to a boil.
Boil for one minute, then turn back down to simmer for 10 minutes. Shut off and cover.
Let sit for about 15 minutes or until the noodles have cooked through.
