Apple Waldorf Salad Recipe
An apple Waldorf salad recipe that is packed with nutrients and is so refreshing.
1 head green cabbage
2 granny smith apples, peeled and cut into chunks
2 gala apples, peeled and cut into chunks
3 celery stalks, chopped
2 cups chopped walnuts
1 cup dried cranberries
2 Tablespoons green onion, chopped
3/4 cup mayonnaise
3/4 cup yogurt, plain
1 Tablespoon Dijon mustard
3 Tablespoons granulated sugar
1/4 cup olive oil
1 teaspoon salt
1/4 cup red wine vinegar
In a very large bowl mix together cabbage, apple strips, celery, cranberries and walnuts.
In a small bowl whisk together mayonnaise, yogurt, mustard, oil, 1 teaspoon salt and vinegar until smooth.
Pour the dressing over the cabbage mixture; toss to combine.
Season with salt and pepper if desired.
Cover and refrigerate overnight or serve fresh.
